Couscous Salad.

In need of something super quick and super easy?! Then you’re in the right place, this couscous salad is soo tasty for something that takes literally 10 mins to make. It’s perfect for a warm evening as its quite a refreshing meal or take it for a light lunch, whenever you eat it you won’t be disappointed!

Prep: 5 mins                         Cooking: 10 mins                        Serves: 4                         Skill: Easy



  • 150g couscous
  • Vegetable stock pot
  • 1/2 a cucumber
  • Small handful of both coriander and mint
  • 3/4 spring onions
  • 100g pomegranate seeds
  • A pinch of seasoning
  • 50g feta cheese

Step 1.
Put the couscous into a large bowl. Melt the vegetable stock in a small amount of boiling water, then pour over the couscous. Top up with boiling water until the liquid covers the couscous. Cover the bowl with clingfilm and leave to the side for 10 mins.

Step 2.
Whilst the couscous is absorbing the stock, deseed the cucumber then chop into fine pieces. Finely slice the spring onions, feta, as well as the mint and coriander at this point too.

Step 3.
Once the couscous has rested for 10 mins give it a stir with a fork to break it all up.

Step 4.
Add all of the chopped ingredients and the pomegranate seeds to the couscous and stir until everything is mixed in well.






Try adding some chopped cooked chicken or halloumi to the salad to mix it up. You could also drizzle some lemon juice over it or olive oil when serving.
